Caramelized Onion, Goat Cheese, & Arugula Flatbread

  • 1 tbsp unsalted butter

  • 1 large RealSweet® onion, thinly sliced 

  • ⅛ tsp salt

  • 1 tbsp veggie stock

  • 1 premade thin-crust flatbread 

  • 2 tsp olive oil, divided 

  • 3 oz goat cheese 

  • 1 cup arugula 

  • 2 Tbsp balsamic glaze


Instructions

  1. Preheat oven to 425°F.

  2. Heat butter in a skillet over medium-low heat. Add onions and cook, stirring frequently, 3-4 minutes. Once onions soften and brown, sprinkle with salt and stir in vegetable stock. Cook for another 1 - 2 minutes and remove from heat. 

  3. Lay flatbread on a baking sheet. Brush with olive oil and top with caramelized onions and goat cheese. Bake 8 - 12 minutes until cheese melts and the crust is crisp. Remove from oven. 

  4. Toss arugula with olive oil, salt, and pepper. Top flatbread with arugula and drizzle with balsamic glaze.
